Visits
The stars are defined by visits by the 12 inspectors of the so-called 'red guide' to the Iberian Peninsula, who evaluate, among other criteria, the quality of the products, the cooking point, the flavors, the creativity, the regularity of the cuisine and the relationship quality / price.
Restaurants are not informed of the presence of Guide agents during the meal, as they act anonymously and behave like regular customers. In some exceptional cases, when it is necessary to know the kitchen or collect some extra information, the agents identify themselves, but only after the assessment and payment of the bill.
The number of visits depends on the restaurant. If you are a candidate establishment to be awarded a star, you can receive up to three or four visits from different inspectors during the evaluation period (from March to December).
